紫米堅果湯種吐司 @ 花神秘館

終於買到已經找了很久的工具書

Yvonne老師的「65度c湯種麵包一書」了

這本書已經找了很久了

甚至還去烘焙材料行預定也是沒下文

還好lulu幫我預定到且買到

這本夢寐已久的做麵包的工具書

lulu真是太感謝妳了

一拿到這本書就迫不及待的想做湯種麵包

翻了翻冰箱的食材剛好有做三色珍珠丸剩下的黑糯米

及一些堅果剛好可做這款顏色漂亮的粉紫色吐司

這次的做法一樣採用低溫發酵法

加了湯種的吐司質地真的好柔軟

又有堅果的口感及紫米的香氣

真是一款健康又好吃的吐司呢!

不過美中不足的是沒有揉到擴展階段

就直接加了紫米及堅果下去

所以後來再怎麼揉也無法到擴展的階段

這也是手工揉麵糰的缺點

索性將它當成微波麵包

中間橫切兩刀再包上蛋及肉鬆

就是一份營養又美味的早餐

不過我將快要脫離手工揉麵族了

手臂再也不用因為揉麵的關係常常又酸又痛了..

因為老爺子已經良心發現幫我買了一台

Kitchen Aid攪拌機，現還在美國月底才會拿到

屆時就可做更多的點心跟大家分享了

『湯種麵糰的材料及做法』:

1.水500g+高筋麵粉100g煮時要不停攪拌以免鍋底燒焦

2. 等麵糰表面呈現條紋狀時即可(約65度左右)

3.麵糰表面黏上保鮮膜避免風乾結皮待涼可放冰箱冷藏隔天再用

『紫米堅果湯種吐司』

材料:

(24兩吐司模型1個)

A.高筋麵粉200g 全麥麵粉200g 奶粉16g 細砂糖50g 鹽6g 快速乾酵母8g

B.全蛋40g 牛奶110g 湯種120 g

C.無鹽奶油40g

D.黑糯米100g 松子及各種堅果200g

前置作業:

1.先將堅果洗淨用乾鍋炒過備用

2.黑糯米1杯須先洗淨，泡水一晚後瀝乾

電鍋內鍋放入1杯黑糯米加水3/4杯，外鍋用1杯水蒸熟放涼備用

做法:

1.將材料A+B倒入鋼盆中攪拌搓揉成為一個不黏手的麵團

2.再將奶油加入繼續攪拌搓揉成為撐得起薄膜的麵團

再將材料D放入攪拌均勻將麵團滾圓收口朝下捏緊放入抹少許油的盆中

3.放入盆中噴灑些水表面蓋上濕布發酵60-90分鐘(約2倍大)

(或是直接放入抹少許油的高密度塑膠袋中入冰箱冷藏一夜隔天取出使用)

4.將第一次發酵完成的麵團的空氣拍出分割成6等份(@約160g)

搓成圓形蓋上溼布再讓麵團休息20分鐘

5.休息好的麵團用桿麵棍桿成長條(約35cm)由短向捲起收口朝下間

隔適當放入吐司烤模中(若不是不沾烤盒請刷上一層奶油避免沾粘)

6.噴些水蓋上溼布再發酵50-60分鐘(約發酵到烤盒的9分滿)

7.最後塗上全蛋液放入預熱的烤箱中

8.以上火150度下火180度烘烤35-40分鐘

9.出爐後馬上倒出放在鐵網架上放涼

花神小撇步:

乾酵母不要跟糖及鹽放在一起，以免酵母脫水死亡

堅果須先洗淨在乾鍋中炒過之後再使用會較香
