熱狗湯種麵包 @ 花神秘館

我最喜歡吃鹹麵包了~

尤其加了大量蔥花的蔥花麵包

這款麵包利用小火腿當花面

蔥花及白芝麻點綴在中間作成花朵的造型

出爐時看到一朵朵的花花麵包

外型很討喜~令人看了很想吃~

Evita平常不吃火腿~

自從聽說火腿配著養樂多吃會致癌後~

這兩樣東西從此被她列於拒絕往來戶

儘管怎麼跟她解釋也沒用..傷腦筋

還好當她心不甘情不願的吃完這熱狗麵包時

竟說:這樣做的火腿麵包還蠻好吃的

呼~!好哩加在~我還在旁邊想~

要怎麼逼她吃完這一整個火腿麵包呢~?

加了湯種的麵包真的好柔軟~

隔天再吃也一樣的柔軟呢!

『熱狗湯種麵包』

(此份量約可做9個)

材料:

1.高筋麵粉195g 低筋麵粉90g 奶粉12g 細砂糖30g 鹽6g

快速亁酵母6g

2.全蛋60g 水65g 湯種75g

(湯種麵糰作法請參考:紫米堅果湯種土司)

3.無鹽奶油45g

表面裝飾材料:

蔥花80g 全蛋1個沙拉油1大匙鹽1/2小匙黑胡椒粉1小匙

做法:

1.將所有乾性材料1放入攪拌缸用1速攪拌均勻,再倒入液狀材料2

2.用速度1將所有材料攪拌均勻到無粉粒狀態之後，改成速度2攪打3-5分鐘

成為一個完整團狀再加入奶油

3.將速度調至4攪打12-15分鐘至薄膜狀態(中間必須不時將黏在勾狀攪拌棒

上面的麵團刮下來這樣攪拌才會均勻)

4.揉至擴展階段(如圖示)即可放入抹少許油的鋼盆中，上蓋溼布或保鮮膜

置於微波爐中(旁邊放1杯熱水)，以縮短發酵時間至麵團成2倍大(約1-1.5小時)

5.將已發酵完成的麵糰輕輕取出，桌面上灑些手粉並用手將空氣拍出

分割成9塊(@60g)滾圓上噴點水，進行中間發酵約30分鐘

6.做最後整形階段:將麵糰收口朝下壓扁，將桿麵棍由中間往上下桿開

7.收口朝上，放上熱狗後，捲起成長條狀

8.使用切麵刀切割4刀，再將頭尾交叉錯開

9.將所有切割面翻朝上，即可進行最後發酵(約1小時)

10.發酵完成的麵糰刷上全蛋液，放上蔥花餡，灑上白芝麻即可入爐烤焙。

11.烤箱以上火上火180度/下火150度，先預熱10分鐘再烤焙約15分鐘

蔥花餡材料中的鹽一定要在使用時才加入，太早加入蔥花會出水
