記得娘家附近有一間老字號的汕頭牛肉炒麵~生意真好~尤其假日時~


從小吃到大~每次回娘家經過時~總會下車吃上一碗解解饞~再回去!


生意好不是沒道理~料多實在~麵是現點現煮~煮完再炒~


料理時間~較久~所以每次去吃總要等上一段時間~


尤其想外帶更是得常常等超過30分鐘以上


這對沒啥耐性的我來說~無疑是一種考驗~


也因為常在外面等~所以偷偷的將料理過程學起來


雖然味道還抓不準但是也不差~至少家人還蠻捧塲的



為了炒出好吃的炒麵~特地跑好..遠去跟一位外省老奶奶買拉麵


她的拉麵很有嚼勁~煮再久也不會軟爛的~


先炒一大鍋的芥蘭沙茶牛肉~留一半在炒鍋內再將已煮好的麵條放入拌炒


湯汁用來拌飯拌麵都好吃



芥蘭沙茶牛肉&汕頭沙茶牛肉麵




材料:


1.牛肉片1斤


2.芥蘭1大把


3.蒜頭3瓣


4.拉麵1斤


調味料:


A.蠔油    鹽    糖   蛋白    胡椒粉    香油    太白粉   各適量


B.沙茶醬     咖哩粉    蠔油     糖    味霖    各適量


做法:


1.牛肉先用水抓過再放入調味料A拌勻醃30分鐘


2.熱鍋冷油再將已醃好的牛肉放入快炒至9分熟撈起備用


3.爆香蒜末再將調味料B放入用小火拌炒至香味出來再加少許水~等水滾


芥蘭放入拌炒最後將牛肉放入拌炒一下即可熄火~(留一半在鍋中)


4.另一鍋開水煮拉麵(水滾拉麵放入等水滾再加一次冷水再滾即可撈起過冷水)


5.將4料放入3料中拌炒均勻即成另一道沙茶牛肉炒麵


 


輕輕鬆鬆~牛肉炒麵加一盤芥蘭炒牛肉完成~


味道真是不錯吃~加了少許咖哩粉提味不少~光是那盤菜~就可以吃上一碗白飯
